Roncal comes from the rich unpasteurised sheep milk of the legendary Lacha and Aragonesa breeds of oveja sheep. Depending on the season, these herds graze in the high Pyrénées or the Bardena area of Navarra, has nutty and piquant flavors with a firm texture. Somewhat similar to Pecorino Toscano and Manchego, Roncal has its own unique, mouth-watering character; it easily crumbles when cut, and has a robust, slightly sharp flavour and a smooth texture. This raw milk sheep’s milk cheese is ripened slowly over the course of several months to develop a rustic, nutty and olive-like flavour and a moist, smooth texture.
