In 2016,the husband and wife team behind Quesos y Besos (cheeses & kisses) quit their day jobs, and decided to move back to their home town of Guarromán, on the out skirts of Sierra Morena ( Sierra sur de Jaen) to bring up their children and start making cheese. Coming from a long line of shepherds this should have come naturally to them. However, like all visionaries they didn’t want to do any thing the easy way and so, as opposed to making the traditional cheese of the region, they decided they wanted to make a lactic cheese. This is probably the oldest form of fermentation as it relies on bacteria to break down the lactose in the milk into lactic acid. Using milk from their own herd of Malagueña goats which roam freely in the local area, able to graze on numerous wild flowers and herbs, they created Olavidia.

Description

Olavidia is a stunning soft creamy goats cheese and has a wonderful texture with a slightly creamy and buttery flavour with floral notes reflective of the goats’ diet. It presents a whitish colour and when cut shows a vein of ash that resembles the classic Morbier. In 2018 they won the best Spanish Cheese, an accolade which was reinforced a year later when it took silver in the world cheese awards, highlighting the exceptional nature of this unique artisanal product

Olavidia cheese is made entirely by hand from the soft paste made from slow-pasteurized goats milk. A lactic coagulation cheese with a square shape and matured with moulds that incorporate charcoal. It has a white mould crust under which there is an ash coating, visually it is very striking, due not only to its crust, but also to a line of edible ash that crosses through the centre of the cheese. Aged for fifteen to twenty days. It is a cheese of intense flavour, where dairy flavours predominate with some notes of white almonds.
