Producing hams since the early 19th century, they are one of Spain’s most respected Jamon curers. From their own herd of Iberico pigs living on their own Dehesa and devouring acorns to give the ham the characteristic sweet nuttiness and wonderful fat full of oleic acid from the acorns.
