The Castellano chickpeas from Zamora is one of the most appreciated chickpeas in the world. Its soft flavour and its almost inappreciable skin make it a highly valued chickpea. With an intensely nutty flavour, it is yellowish, spherical and has a smooth surface with marked lines. Intensely nutty and with a very fine skin the texture is greasy and delicate when cooked. Planted in mid Winter (February) it is harvested in mid Summer (July), needs 12 hour soaking in cool water before use.
